For this recipe I took my Eton Mess recipeand turned it into ice cream! It has all the components of the traditional English dessert including strawberries and meringue but instead of whipped cream you’ve got a creamy and delicious vanilla ice cream. And it works beautifully!

Prep time: 10 minutes + Freezing time

WW Points: ~2 per serving (serves 4-6)

Ingredients:

600ml (20 fl oz) Fat-Free Greek Yogurt (0%): Our high-protein ice cream base (0 Points).

600g (1.3 lbs) Fresh Strawberries: Hulled and mashed into a thick syrup (0 Points).

2 tbsp Granulated Sweetener: Stevia or Erythritol (0 Points).

1 tsp Vanilla Extract: To give it that classic vanilla bean flavor (0 Points).

2–3 Store-bought Meringue Nests: Roughly crushed for that signature crunch (~6-9 Points total).

Instructions:

1. Sweeten the Base: In a large bowl, whisk together the fat-free Greek yogurt, vanilla extract, and sweetener until completely smooth.

2. Create the Swirl: Mash half of your strawberries with a fork to create a chunky sauce. Slice the other half into small pieces.

3. The Mix-In: Gently fold the mashed strawberry sauce, the sliced berries, and the crushed meringue into the yogurt. Do not over-mix; you want to see those beautiful pink swirls!

4. Freeze: Transfer the mixture into a freezer-safe container.

Pro Tip: To keep it creamy, stir the mixture every hour for the first 3 hours to break up ice crystals.

5. Serve: Remove from the freezer about 10–15
