This epic nachos recipe is going to be the highlight of your afternoon, evening, buffet, or whatever meal or occasion you’re making them for. As
long as you choose thick, sturdy tortilla chips (not the thin ones that will
snap when you’re trying to scoop up the nachos toppings), there’s nothing that can go wrong. This is a recipe that’s easy to follow and perfect for Tex-Mex food lovers.
Ingredients
- 1 pound ground beef
- 1 can refried beans
- ½ diced yellow onion
- 1 package taco seasoning
- ¾ cup cold water
- 2 diced Roma tomatoes
- 3 sliced scallions
- 1 pound shredded Mexican blend cheese
- 2 large bags of tortilla chips
Instructions
- Brown the beef and onions in a skillet on the stove for 8 minutes or until cooked through.
- Drain off and discard the grease.
- Put the meat back in the pan and stir in the taco seasoning.
- Stir in the water and bring the mixture to a boil.
- Turn down the heat and gently simmer for 5 minutes or until most of the liquid is gone.
- Preheat the oven to 400°F.
- While the beef mixture cooks, spread the tortilla chips over a pair of parchment paper lined baking sheets.
- Add dollops of refried beans and then add the ground beef mixture.
- Sprinkle the cheese on top and bake for 15 minutes.
- Remove from the oven and add the diced tomatoes and scallions on top, then serve right away.

Variations and Substitutions:
There are lots of variations when it comes to nachos and you can make all kinds of swaps, such as ground turkey or pork for the beef, a different kind of shredded cheese (sharp cheddar is good here), or some fresh or canned jalapeno slices.
