  • Publix Fat Free small curd cottage cheese 1/2 cup s
  • Cooked onion s 1/4 cup(s)
  • Himalayan pink salt 1/4 tsp
  • Black pepper 1/4 tsp
  • Ground Mustard 1/4 tsp


  1. Place 1 smooshed slice of toast in each large muffin cup.
  2. Add veggies of choice in each cup. I had onions.  would have loved some mushrooms.
  3. Whisk eggs and evenly Pour egg mixture into the cups.
  4. Cover & pop in the oven. I baked at 375 for about 30 minutes.
  5. Came out nice ‘n fluffy
