Best Time to Buy Fresh Artichokes
The peak season for artichokes is March to May. However, there is also a small window during October that you can purchase them fresh. BUT don’t worry, because for this roasted artichoke recipe you can use frozen as well!
How to Prep a Roasted Artichoke
If you are using frozen artichokes, you will not have to worry with this step. But, if you found some nice, fresh artichokes you will need to trim them prior to cooking!
Trim off some of the stems.
Cut off the top portion that is somewhat prickly.
Also, trim the lower leaves closer to the stem, and any of the “tips” that seem sharp.
Ingredients for Roasted Artichokes
3 Tsp Olive Oil
4 Fresh artichokes (halved)
1 head of garlic
Ingredients for Roasted Artichoke Remoulade
1 tbsp mayo (fat-free)
1 teaspoon Creole mustard
Lemon juice (1/2 of lemon, squeezed)
Hot sauce to taste (Tabasco or Texas Pete)
*This is for one serving of sauce, 1 Smartpoint per serving. Feel free to make more just by doubling or tripling!
How to Make Roasted Artichokes
Preheat air fryer to 390 degrees.
In a small bowl, crush a head of garlic and into the olive oil.
Steam artichokes for about 10 minutes on the stove, then remove and cut in halves.
Spoon garlic mixture into each halved artichoke. Add salt and pepper to each.
Air fry for 4 minutes at 390 degrees.
