Crustless Tuscan Quiche a bowl of heavenly deliciousness this morning!! It is full of flavor, loaded with protein and calcium and best part…this entire recipe is one weight watchers point!
Ingredients
- 2 eggs beaten before adding the rest
- 1/4 cup no fat cottage cheese
- 1/4 cup finely chopped spinach
- 1/8 cup chopped sun dried tomatoes without oil
- 1/2 tablespoon grated Parmesan cheese
- avocado oil cooking spray
- A couple shakes of garlic powder-
- more or less to your liking!

- In a small bowl combine all the ingredients. Stir well and pour into a greased 8oz. Ramekin bowl. I use 100% pure avocado oil cooking spray! (Tip: No other ingredients should be in your cooking spray! Just the oil! And no aerosol spray!)
- Bake at 350° for approximately 30 minutes or until the top begins to brown just a little! The texture will be light and fluffy.
