Crockpot Balsamic Pork Roast 

Servings: 8 (about 3-4 oz pork per serving)

Cook Time: 6-8 hours on low

Points: Approx. 4-5 per serving (lean pork + balsamic/honey glaze; check your tracker for exact)

Ingredients:

•  2 lb boneless pork shoulder roast or pork sirloin roast (lean cut, trim visible fat for lower points)

•  ½ tsp salt

•  ½ tsp garlic powder

•  ½ tsp black pepper (or red pepper flakes for a kick)

•  ½ cup low-sodium chicken broth (or water)

•  ½ cup balsamic vinegar

•  2-3 Tbsp honey (or sugar-free substitute to drop points further)

•  1 Tbsp Worcestershire sauce (optional, adds depth but skip if strict low-point)

•  3-4 garlic cloves, minced (or 1 tsp garlic powder)

Instructions:

1.  Season the pork roast on all sides with salt, garlic powder, and pepper. Place it in the crockpot.

2.  In a small bowl, whisk together the balsamic vinegar, honey, chicken broth, Worcestershire (if using), and minced garlic.

3.  Pour the mixture over the pork.

4.  Cover and cook on LOW for 6-8 hours (or HIGH for 3-4 hours) until the pork is fork-tender and shreds easily.

5.  Remove the pork to a plate and shred with two forks (it should fall apart).

6.  Optional: For thicker “gravy,” transfer the liquid to a small pot on the stove, bring to a simmer, and reduce for 5-10 minutes (or thicken with a cornstarch slurry: 1 tsp cornstarch + 1 Tbsp water).

7.  Serve the shredded pork with some of the sauce drizzled over. Great with steamed veggies, cauliflower rice, or a side salad to keep points low.

Tips for even lower points:

•  Use pork tenderloin or loin (leaner) instead of shoulder → drops to ~3-4 points.

•  Reduce honey to 1 Tbsp or use a zero-point sweetener.

•  Skip Worcestershire if needed.

•  Portion control: 3-4 oz pork + sauce = low-point main dish.

This one gets tons of “recipe please!” comments because it’s set-it-and-forget-it, juicy, tangy-sweet, and healthy-ish. Pair it with zero-point veggies for a full meal.
