Creamy steel cut oats with mushroom and kale

This is a savory oatmeal and you can really switch it up depending on the veggies you have on hand! the whole recipe is only three weight watchers points!

Here is everything you need

1 cup steel cut oats
4 ounces cremini mushrooms
1 tap better than bouillon vegetable bouillon
cooking spray
kale

Instructions
make the steel cut oatmeal as per the can -i use one cup and just stir in a tsp of Better Than Bouillon vegetable bouillon.
While that is cooking, I cooked sliced mushrooms, in this case about 4 oz cremini, mushrooms in a skillet with olive oil cooking spray until roasted and all the liquid is cooked out, then stir them into the cooked oatmeal with some chopped kale. The kale will wilt/cook in the hot oatmeal. That’s it. Sometimes I use broccoli, spinach, or other seasonal veggies, Anything works. Let me know how you adapt
