Creamy Crunchy Chickpea Salad

Who said salads can’t be filling, flavorsome, and friendly to your waistline?🥗😉 This Creamy Crunchy Chickpea Salad is here to redefine your salad game, and trust me, you won’t miss the potato salad – only 1 weight watchers point per serving! Recipe makes two servings!

Ingredients
  • – Chickpeas rinsed and drained 🌰 (3 cans)– Nonfat Greek Yogurt 🍦 1/2 cup– Low-fat mayo 🥄 3 tablespoons– Dijon Mustard 🥄 1 tablespoon– Juice of 1 lemon 🍋– Salt and pepper to taste 🧂– Fresh herbs of your choice 🌿– Crunchy veggies I used sweet peppers, capers and pickles 🌶️🥒
Instructions
  1. Mash a third of the chickpeas, mix with the rest along with your crunchy veggies. Prepare a zesty dressing by combining the yogurt, mayo, mustard, lemon juice, and herbs. Pour it over, mix, and voila – your creamy, crunchy chickpea salad is ready!
