Copycat KFC Chicken Bowl Casserole

You may have seen Copycat KFC bowls floating around the WW community-which I LOVE so much! In fact I found myself making individual bowls for my entire family…which got me thinking…I could turn the individual bowls into a CASSEROLE for my entire family!! And let me tell you…my family just can’t get enough of it! 

What ingredients do I need to make this Copycat KFC Bowl Casserole?

  • Mashed potatoes– I like to use Trader Joe’s frozen mashed potatoes. Make sure to thaw them before adding them into the casserole. You could also make your own mashed potatoes.
  • Whole kernel corn– I use frozen. You could also use canned- be sure to drain the liquid.  
  • Popcorn chicken, breaded chicken tenders, or chicken nuggets– you could use Tyson’s blackened chicken strips that are grilled and make for a great alternative to breaded chicken.
  • Reduced fat or fat free shredded cheddar cheese- I like to use Velveeta shreds. It melts well and is lower in points than most cheeses. A 1/4 cup is 2 Smartpoints! I found it at my local Walmart store.
  • Brown gravy-I use the bottled Heinz brown gravy. It’s simple and 1/4 cup is only 1 point.

Using 1/3 cup mashed potatoes, 1/4 cup corn, 2 oz. Tyson’s popcorn chicken, and 2 Tbsp Velveeta cheese and gravy,

How do I measure 10 ounces popcorn chicken?

I like to use THIS food scale to measure out 10 oz. popcorn chicken.

If you don’t have a food scale-it’s equivalent to about 10-12 ( depending on size)  popcorn chicken pieces. 

Cook popcorn chicken pieces either for 3-5 minutes or until chicken is soft and tender.

Remove chicken pieces from oven or air fryer. Let the popcorn chicken cool for 5 minutes.

Spray 9×13 baking dish with non stick cooking spray. Spread a single layer mashed potatoes into prepared dish.

(If the mashed potatoes are hard/cold just place in microwave for 2 minutes so it’s easier to spread)

Ingredients: 

  • 2 1/2 cups mashed potatoes-I like to use Trader Joe’s frozen mashed potatoes (Make sure to thaw them before adding them into the casserole) or I make my own using peeled cooked potatoes and smashing them into a smooth consistency.
  • 2 cups whole kernel corn, frozen and thawed 
  • 10 oz. Tyson’s popcorn chicken or chicken nuggets or Tyson’s blackened chicken tenders for a zero point chicken option 
  • 1/2 cup reduced fat shredded cheddar cheese- I use Velveeta Shreds 
  • 1/2 cup Heinz Classic Chicken gravy 

Directions:

  1. Preheat oven or air fryer to 400 degrees. Cook popcorn chicken for 3-5 minutes or until chicken is soft and tender.
  2. Remove chicken pieces from oven or air fryer. Let the popcorn chicken cool for 5 minutes.
  1. Spray 9×13 baking dish with non stick cooking spray. 
  2. Spread a single layer mashed potatoes into prepared dish. ( tip-if the mashed potatoes are hard/cold just place in microwave for 2 minutes so it’s easier to spread)
  3. Layer the corn over the top of the mashed potatoes. 
  4. Using a knife cut popcorn chicken into quarters.
  5. Layer popcorn chicken pieces on top of corn.
  6. Cook for another 10 minutes, or until the chicken is crispy.
  7. Remove from oven and sprinkle cheese over the top and place back into the oven until cheese is melted.
  1. Heat the gravy on the stove top or according to the instructions.
  2. Drizzle the gravy over the casserole.
  3. Enjoy! 

Makes 6 (1 cup) servings

4 Points® per serving if using Tyson’s popcorn chicken or 1 Point® per serving if using Tyson’s blackened chicken tenders
