Chicken Potato Salad

Ingredients

  • 8 oz boneless skinless chicken breast, cooked and diced

  • 2 tbsp light mayonnaise
  • 2 tbsp sweet relish
  • ½ tsp onion powder
  • ¼ cup reduced-fat cheddar cheese, shredded
  • Salt and black pepper to taste

Instructions

  1. Cook the chicken, potatoes, carrot, and peas until tender.
  2. In a large bowl, mix together the Greek yogurt, light mayo, relish, onion powder, salt, and pepper.
  3. Add the chicken and vegetables, then toss until evenly coated.
