Guys. Had to get on here and share a recipe I just created for Cheesy Cajun Shrimp & Grits. It tastes buttery and indulgent, but only 7 points per serving.
Finely dice celery, onion, and red bell pepper. In non-stick skillet on medium high heat, sauté veggies and shrimp, with choice of spices. (I coated my raw shrimp in blackening seasoning and sprinkled a little bit of the others pictured over everything.) After 8 minutes, pour 1/2 cup of chicken broth in pan to deglaze and create “sauce”. Let simmer.
Grits- Boil 1 1/2 cups chicken broth with 1 tsp of garlic powder and Molly McButter. Add 3 packets of Quaker Instant Butter Grits and rest for five minutes.
To Serve-
Divide grits equally between 2 bowls.
Top each with half of the shrimp/sauce mixture, diced green onions, 1/8 cup of reduced fat Mexican cheese, crushed red pepper flakes and a sprinkle of Old Bay!
It all comes together quickly. If you don’t believe me just look in the background of the picture. (I made the whole recipe while my toddler was eating lunch!)
