Breakfast Fruit + Yogurt Bake

This protein-packed Breakfast Fruit and Yogurt Bake is so delicious and just perfect for those who love something a little sweet in the morning

Ingredients:

  • 2 cups plain Greek yogurt
  • 4 large eggs
  • 1/4 cup raw honey or pure maple syrup, plus extra to serve
  • 1/2 cup oat flour or ground oats
  • 1 tsp vanilla extract
  • 1 cup mixed fresh berries, plus extra fruit to garnish

Instructions:

Preheat your oven to 350 degrees f. and lightly spray or brush an 8×8 baking dish with coconut oil cooking spray

In a large mixing bowl, add the yogurt, eggs, honey, oat flour, and vanilla. Whisk until smooth.

Gently fold in the fresh berries

Transfer the batter to your prepared baking dish.

I added a few extra berries to the top at this point, but that’s optional

Bake for 35-40 minutes, or until fully set in the center.

Once the yogurt bake is finished baking, remove it from the oven and allow it to completely cool before slicing.

Serve with extra yogurt, honey, and fruit as desired.

Wrap leftovers tightly in plastic wrap and store in the refrigerator for up to 3 days.
