Blueberry Protein Pancakes!

Weight Watchers points breakdown 1 = 1 point 2 = 3 points 3 = 4 points

Ingredients

  • 4 cups Kodiak buttermilk pancake mix – 30 points
  • 3 cups water
  • 4 small or 2 large ripe bananas mashed 1 tsp vanilla
  • Blueberries
  • Mash bananas
  • Mix all ingredients together except blueberries

Instructions

  1. Heat pan or grill plate to medium low heat Measure 1/4 cup for each pancake
  2. Evenly distribute blueberries on each pancake when initially placed on the pan
  3. Allow to cook for approximately 4-5 minutes (they are thick)
  4. Flip and cook until the batter is cooked through, maybe another 3 minutes.
  5. I got 22 pancakes. If you get a different amount, the points may change. You can also add a little more water so the batter isn’t as thick.

Recipe Notes

I ate mine with no sugar syrup. I’ll absolutely make these again. I didn’t freeze any because I didn’t have enough left over but next time I may double the recipe and freeze some for future use.
