Ingredients
- 4 cups Kodiak buttermilk pancake mix – 30 points
- 3 cups water
- 4 small or 2 large ripe bananas mashed 1 tsp vanilla
- Blueberries
- Mash bananas
- Mix all ingredients together except blueberries
Instructions
- Heat pan or grill plate to medium low heat Measure 1/4 cup for each pancake
- Evenly distribute blueberries on each pancake when initially placed on the pan
- Allow to cook for approximately 4-5 minutes (they are thick)
- Flip and cook until the batter is cooked through, maybe another 3 minutes.
- I got 22 pancakes. If you get a different amount, the points may change. You can also add a little more water so the batter isn’t as thick.
Recipe Notes
I ate mine with no sugar syrup. I’ll absolutely make these again. I didn’t freeze any because I didn’t have enough left over but next time I may double the recipe and freeze some for future use.
