Blueberry Cheesecake with graham cracker crumbles

One weight watchers point Blueberry Cheesecake with graham cracker crumbles deliciousness! this entire recipe makes six servings

Instructions

  1. 24 ounces fat free cottage cheese.
  2. 16 ounce bag of frozen blueberries defrosted ( I didn’t use the whole bag)
  3. 2 whole graham crackers (I used honey maid brand) be sure to scan your brand. They don’t all scan the same.
  4. Zest of a lemon and its juice
  5. Sweetener of your choice
  6. I used 3 teaspoons of whole earth
  7. Stevia/monk fruit, I don’t like it to sweet
  8. Put the cottage cheese in the food processor or blender. Blend until smooth
  9. Add zest, lemon juice and sweetener blend until mixed
  10. Starting with the graham cracker crumbs layer crumbs, cheese mixture, blueberries. I was able to do 2 layers but it will depend on how you dish it. I added another half graham crumb for decorating.
  11. Enjoy
  12. Makes 6 servings

Recipe Notes

blend, blend, blend the cottage cheese. You can also omit the graham cracks in the layers and top when ready to serve. That way you will not have the grainy texture
