Almond Crumble Blueberry and Raspberry Mini Cakes

3 points per serving on Weight Watchers Blue and Purple And 4 points per serving on Weight Watchers green. This recipe is super versatile and can be paired with other fruit! make individual servings to freeze for later.

Instructions

  1. Batter:
  2. 1 Box of SF Yellow Cake Mix (reserve ½ cup)
  3. 3 eggs
  4. ¾ cup of unsweetened applesauce
  5. ¾ cup of water.
  6. Mix until combined
  7. Crumble:
  8. ½ cup reserved cake mix
  9. 1 tbsp of light butter spread
  10. ½ cup of slivered almonds
  11. In a small bowl, mix using a fork butter and cake mix until it looks like sand (see pic) mix in almonds. Set aside.
  12. Preheat oven 350, grease muffin or brownie pan, and fill each cavity with 1/4 cup of batter, place about 8 blueberries in a double row down the middle in 8 of them and 4 halves of raspberries down the middle in the other 8, sprinkle with the almond crumble.
  13. Bake 15 minutes, let cool in pan for 15 minutes.
  14. That’s it, let come to room temperature before freezing individually.
  15. Can be frozen for up to 3 months.
