Great summer dish. Light and refreshing! Total 3 weight watchers point dinner.
Ingredients
- 1 salmon fillet 3 oz- 0 pts
- Trader Joe salmon rub seasoning 0 pts cut strawberries(0 pts),
- mango 0 pts,
- 1/4 cup avocado 1 pts,
- fresh diced cilantro 0 pts
- lime juice
- 1/4 cup white rice 2 pts
Instructions
- Take salmon fillet and remove skin and cut in small chunks. I seasoned with Trader Joe salmon rub seasoning (0 pts) Cook the salmon.
- I put in air fryer at 400 degrees for 6 minutes.
- Toss salmon in bowl with cut strawberries(0 pts), mango (0 pts), sliced avocado, fresh diced cilantro (0 pts) and lime juice.
- Serve over 1/4 cup white rice.
