4-Ingredient Baked Marshmallow Fluff Dessert

A few years ago, I discovered marshmallow fluff. I don’t know why it took me so long to try it, but I really love it. It’s like the melted, gooey inside of a roasted marshmallow, but easily accessible as a spread.

The thing is, marshmallow fluff is kind of expensive. I was using a bunch of marshmallow fluff recently while recipe testing and I just couldn’t bear spending so much money on the tiny little jars. So I decided to make my own.

Most versions require a stovetop, pot, and a candy thermometer. But I came across a homemade marshmallow fluff recipe that can be made in the stand mixer and it came out beautifully.

The marshmallow fluff came out white as snow, whipped up to beautiful peaks, and was fluffy and creamy. The great thing about homemade fluff is, you can even make other flavors too. Also, you can make a bunch and gift them!

This little 4-ingredient oven-baked marshmallow fluff dessert is the kind of thing you throw together on a tired weeknight when you still want to spoil everyone a bit. It reminds me of the quick bakes we used to make for church youth group—simple pantry ingredients, big payoff, and a pan scraped clean in minutes.

You literally dump a whole jar of marshmallow fluff into a glass baking dish, scatter in a few helpers, and let the oven do the work. It comes out like a gooey, toasty, caramel-kissed marshmallow cobbler that feels right at home on any Midwestern table.

Serve this warm right out of the baking dish, with a big spoon and small bowls so everyone can scoop up the gooey center and those toasty brown edges. A scoop of vanilla ice cream or a dollop of whipped cream on top is just perfect, since the cool creaminess tames the sweetness a bit.

Ingredients:

  • 1/2 jar marshmallow fluff (about 3.5–4 oz)
  • 2 cups mini pretzels, lightly crushed
  • 1/3 cup semi-sweet chocolate chips (or sugar-free)
  • 1 tablespoon unsalted butter, melted (or swap with 1–2 tbsp low-fat yogurt)
