Instructions
- Preheat the broiler on Low. Line a small baking sheet with foil.
- Arrange the bread on the pan and lightly coat with cooking spray. Broil until toasted, about 2 minutes. Turn the bread over and coat with cooking spray. Broil until the tops are toasted, about 2 minutes. Let cool slightly. Cut the bread into cubes.
- Using a sharp knife, cut off all the peel and white pith from the oranges. Working over a small bowl, cut the oranges between the membranes to release the segments into the bowl. Spoon ¼ cup yogurt each into 2 parfait glasses. Top each with a quarter of the orange segments, then a quarter of the bread cubes. Repeat the layers with the remaining yogurt, orange segments, and bread.
