Ingredients

Healthy butter cookies

Pinch of salt

1 cup all-purpose flour

3 tbsp light  butter (I Can’t Believe It’s Not  Butter Light)

3 tbsp unsweetened applesauce

¼ cup zero-calorie sweetener (Swerve, Monk Fruit, etc.)

1 tsp vanilla extract

1 egg white

Instructions

1. Make the dough

  • In a bowl, cream together light butter + sweetener.
  • Add egg white, vanilla, and applesauce and mix until smooth.
  • Add flour + salt and mix until soft dough forms.

2. Shape the cookies

Low-point cookies

  • Chill dough for 20 minutes (helps low-fat dough hold shape).
  • Roll into 20 small balls and flatten slightly with fingers or fork.

3. Bake

  • Preheat oven to 350°F (175°C).
  • Bake 8–10 minutes until edges are lightly golden.
  • Cool before removing from tray.
