The Jennifer Aniston Salad

once actress Jennifer Aniston gave fans a glimpse of her day when she took over her beauty company Living Proof’s Instagram account and shared this salad as one of her faves well – we had to try it for ourselves! And I am honestly so happy with this salad. It’s soooo good. 5 weight watchers points a serving. The salad made about 6 cups, and each serving is 1 cup.


  • English cucumber s
  • 1 cup s, Chopped
  • Fresh parsley 1/2 cup s
  • Fresh mint leaves
  • 1/2 cup s
  • Uncooked red onion s
  • 1/3 cup s (chopped),
  • Unsalted dry roasted pistachio nuts 1/2 cup s
  • Canned chickpeas
  • 1 can s
  • Fresh lemon juice
  • 5 Tbsp
  • Extra virgin olive oil
  • 1/8 cup s
  • Odyssey Fat free feta chunk
  • 1/2 cup s
  • Table salt
  • 1 pinch es
  • Black pepper 1 pinch es
  • Cooked bulgur 2 cup s


  1. Prepare bulgur — Add bulgur and water to a small pot and bring the water to a boil. Reduce to a simmer, cover and cook for 12 minutes. Drain off any access water. Fluff with a fork and let cool for 5-10 minutes.
  2. In another bowl, stir together cooked bulgur, cucumber, parsley, mint, red onion, pistachios, chickpeas, lemon juice, olive oil, salt, pepper and feta.
