Tex Mex Salad Bowl Recipe

2 point  Need a break from classic salad? This tasty version is chockfull of vegetables cheese and beans, and then spiked with creamy salsa dressing

Ingredients

  • 1/2 slice of American cheese
  • bed of greens
  • 1/4 cup black beans
  • 1/4 cup corn
  • 1/4 cup cucumbers
  • 1/4 cup bell peppers
  • 1/4 cup cherry tomatoes.
  • 1/4 cup salsa
  • 1/4 cup fat free Greek yogurt.

Instructions

  1. In a medium bowl, combine salsa and yogurt.
  2. add greens, peppers, cucumber, tomatoes black beans corn; mix well. top with half a slice american cheese
  3. Yields about 1 serving.
  4. the entire bowl is just two weight watchers points.
