I never was a big fan of spaghetti squash until I made this. It’s creamy and full of vegetables!!
Yummy! This entire casserole is six points on Weight Watchers.
To make you roast a whole spaghetti squash in the oven at 400° for about 45 minutes. I prick the skin before I bake. Once you remove the seeds scrape the squash into a bowl. I added about 4 tablespoons of reduced fat cream cheese, some dried onions, garlic Powder and s&p. I sprinkled in some fat-free feta an added one box of defrosted drained spinach. Mix in 2 eggs and bake at 350° for about 30-40 minutes. You just want to take it until it sets. . So yummy!
