Snickerdoodle Rolls makes four rolls each is two points on Weight Watchers
Ingredients
- Large Banana 125 grams or 4.5oz. weight
- 1 Cup of High Protein Pancake Mix – I use Kodiak. Spooned in measuring cup/scrape off top. don’t scoop directly from bag with measuring cup
- 1 tsp of baking powder
- 1/4 tsp of salt
- 1/4 cup of Brown Sugar Replacement I use Lakanto Monkfruit
- 3 tsp of Ground Cinnamon
Instructions
- Preheat oven 350 degrees, grease small baking dish
- Mash banana, add baking powder, salt, 1 tsp cinnamon add pancake mix, mix with large spoon until dough ball forms. Sprinkle a flat surface with pancake mix, pat dough to a 1/2″ rectangle, spray with butter spray about 8 times.
- Mix brown sugar w/2 tsp of cinnamon, sprinkle about 1/2 of mixture over top of dough. Roll long side to long side, cut 4 equal portions. Sprinkle surface with remaining cinnamon/sugar and roll the rolls into mixture, place in baking dish.
- Bake 20 minutes.
- Glaze with 4 tbsp of Powdered Sweetener 1 1/2 -2 tsp of almond milk.
- Let roll cool and add glaze.
