Roasted Tomato and fresh basil Spaghetti squash bake

This recipe serves 4 and each serving is three weight watchers points


  1. •Basically started by roasting spaghetti squash halves in Italian spices, onion powder, garlic & drizzled with olive oil and placed cut side down in a 9x 13 ~35-40min at 375.
  2. •While that’s roasting, In a small baking dish (separate), I mixed 2 T Trader Joe’s spinach artichoke dip, 10 Boursin cheese balls/cubes, fresh spinach and basil, 1 container of grape tomatoes, 1/2 yellow onion (finely diced), fresh garlic, Italian spices of your choice….
  3. I put this in oven until cheese was melty and the tomatoes “pop”.
  4. Once squash is done, I scooped out the “noodles” and added them to the cheesy tomato mixture and tossed together!

Recipe Notes

I used 1.5 halves of a medium sized squash for the sauce I made which came out to a total of 3 points for each serving
