I made this up this last week to take up to my Dad’s house (as a thank you for his help with our beater car…) and I have to say it was AWESOME.
I needed something quick, something, easy, and something sweet – pina colada fluff it is!
I made this fluff with pineapple, coconut, vanilla pudding mix, marshmallows, pecans (totally optional) and a bit of rum extract to give it that true pina colada flavor. Sooo spectacular!
This dessert salad would be perfect for your next get together, potluck or picnic. It takes like two short minutes to pull together and just about that long for it to be inhaled.
A creamy tropical dessert with all the flavors of a piña colada—without the extra points!
Ingredients
- 1 (3.4 oz) box sugar-free vanilla instant pudding mix
- 1 (20 oz) can crushed pineapple, undrained
- 1 cup fat-free Greek yogurt
- 1 cup Lite Cool Whip, thawed
- 1 teaspoon rum extract
- ¼ cup unsweetened shredded coconut
- Optional: ½ cup diced pineapple for extra texture
Instructions
- In a large bowl, combine the crushed pineapple (with its juice) and pudding mix. Stir until well blended.
- Mix in the Greek yogurt and rum extract until smooth.
- Gently fold in the Lite Cool Whip.
- Stir in the shredded coconut.
- Cover and refrigerate for at least 1 hour before serving.
Servings: 8
