Ingredients
- 1 banana smash a bit
- 1 oz dry oatmeal
- 1 egg
- Pinch baking soda
- 1/4 t baking powder
- A bit of salt
Instructions
- Put all of this in a bowl and mix with a hand mixer until the banana is well blended.
- At this point you can fold in blueberries or cranberries. I fill 4 4” silicone molds. I pour the batter into the molds and then push 5 blueberries down into each one. I also crumble some walnuts on top. I do it this way so the blueberries are evenly distributed.
- Put into the refrigerator for 30 minutes. Set the oven at 350 and cook for about 40 minutes.
Recipe Notes
You can adjust the following spices to your liking.
1 t cinnamon
1/4 t cardamon
Touch of extract. I use either banana or almond.
1/8t ginger
1t poppy seeds
