Low-Point Mississippi Pot Roast (Weight Watchers Friendly)

Ingredients

  • 2½–3 lbs extra lean beef roast (96–97% lean), trimmed of visible fat
  • 1 packet ranch seasoning mix
  • 1 packet low-sodium au jus or brown gravy mix
  • 6–8 pepperoncini peppers
  • ½ cup pepperoncini juice
  • 1 tbsp light butter (optional, for richness)
  • ½ cup low-sodium beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Place the beef roast in a slow cooker.
  2. Sprinkle the ranch seasoning, au jus mix, garlic powder, and onion powder over the meat.
  3. Add the pepperoncini peppers, pepperoncini juice, beef broth, and light butter.
  4. Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is fork-tender.
  5. Shred the beef and mix it with the cooking juices before serving.
