Low-Point Mississippi Pot Roast (Weight Watchers Friendly)

Ingredients
- 2½–3 lbs extra lean beef roast (96–97% lean), trimmed of visible fat
- 1 packet ranch seasoning mix
- 1 packet low-sodium au jus or brown gravy mix
- 6–8 pepperoncini peppers
- ½ cup pepperoncini juice
- 1 tbsp light butter (optional, for richness)
- ½ cup low-sodium beef broth
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Place the beef roast in a slow cooker.
- Sprinkle the ranch seasoning, au jus mix, garlic powder, and onion powder over the meat.
- Add the pepperoncini peppers, pepperoncini juice, beef broth, and light butter.
- Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is fork-tender.
- Shred the beef and mix it with the cooking juices before serving.
