Ingredient Notes & Substitutions

Tomatoes: There is no right or wrong type of tomato. Roma, Beefsteak or on-the-vine tomatoes are great.

Cucumbers: English Cucumbers or Persian cucumbers are good, considering they have no seeds. If you don’t mind seeds, any type will do. 

Onion: The onion can be red, Vidalia or white onion slices. If you’re not a fan of onion, you can also add a few dashes of onion powder to the mix of your cucumbers and tomatoes for a touch of onion without the texture. 

Granulated sugar: This addition is optional but can add a tangy sweetness to this marinade. If you’re watching your sugar intake or want to reduce the carbohydrates consumed from sugar, you can opt for an alternative. Popular sugar alternatives include Swerve, stevia, and monk fruit white sugar blends.


How to Make It

Step 1. Place the vegetables into a large mixing bowl and toss to combine. Remember, you can add your own variations of veggies to make this dish your own. The sky is the limit here! I recommend crunchy vegetables!

Step 2. Pour the water over the vegetables.

Step 3. In a small bowl, combine the oil, vinegar, sugar, basil, and salt and pepper to taste. Whisk to combine well and pour this over the vegetables in the bowl


Step 4. Stir to coat the vegetables well and allow them to marinate in the fridge for at least two hours before serving. This is key. Allowing them to sit in the refrigerator for at least a couple of hours is mandatory if you want your marinade to really soak into the veggies and work!

  • Place the vegetables into a large mixing bowl and toss to combine.
  • Pour the water over the vegetables.
  • In a small bowl, combine the oil, vinegar, sugar, basil and salt and pepper to taste. Whisk to combine well, and pour this over the vegetables in the bowl.
