Made enough dinner to bring for lunch tomorrow! Curry roasted cauliflower with shrimp/bacon pan fry.

Tossed some big cauli florets in olive oil, salt, curry powder and ginger. Roasted those at 400 degrees until fork tender.

Meanwhile on the stove, cooked down down zucchini and a chopped tomato in olive oil until soft and fragrant. Added shrimp and finished off with some real bacon bits until cooked through.
