Ingredients
- 1 teaspoon olive oil
- 12 oz 99% lean ground turkey
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup red bell pepper, sliced
- 1/2 cup yellow bell pepper, sliced
- 1/2 cup orange bell pepper, sliced
- 1/4 cup onion, thinly sliced
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1/3 cup white wine
- 1 (28 oz) can diced tomatoes, undrained
- 2 tablespoons fresh parsley
- 5 oz whole-wheat egg noodles (dry)
Instructions
- Cook noodles according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook until browned, breaking it apart.
- Add bell peppers, onion, and garlic; cook 3–4 minutes.
- Stir in Italian seasoning and red pepper flakes.
- Pour in white wine and simmer for 2 minutes.
- Add diced tomatoes and cook 8–10 minutes until slightly thick.
- Toss with cooked noodles and mix well.
- Sprinkle with parsley and serve.
