Italian Drunken Noodles

Ingredients

  • 1 teaspoon olive oil
  • 12 oz 99% lean ground turkey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup yellow bell pepper, sliced
  • 1/2 cup orange bell pepper, sliced
  • 1/4 cup onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/3 cup white wine
  • 1 (28 oz) can diced tomatoes, undrained
  • 2 tablespoons fresh parsley
  • 5 oz whole-wheat egg noodles (dry)

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add ground turkey and cook until browned, breaking it apart.
  4. Add bell peppers, onion, and garlic; cook 3–4 minutes.
  5. Stir in Italian seasoning and red pepper flakes.
  6. Pour in white wine and simmer for 2 minutes.
  7. Add diced tomatoes and cook 8–10 minutes until slightly thick.
  8. Toss with cooked noodles and mix well.
  9. Sprinkle with parsley and serve.
