Italian “Drunken” Noodles 

Craving comfort food without blowing your points? This lighter version of Italian Drunken Noodles is packed with flavor, protein, and veggies — but keeps it WW-friendly!

🛒 Ingredients:

  • 8 oz (225–250g) whole wheat pasta
  • 10 oz (300g) lean ground chicken or turkey (93–95% lean)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • ½ cup dry red wine
  • 1 tsp olive oil or cooking spray
  • 2 tbsp grated light Parmesan cheese
  • Salt, black pepper, Italian seasoning to taste

👩‍🍳 Instructions:

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil (or spray) over medium heat.
  3. Add garlic and lean ground meat. Cook until browned.
  4. Stir in bell peppers and cook for 3–4 minutes.
  5. Pour in red wine and let simmer 3–5 minutes (alcohol cooks off).
  6. Add diced tomatoes and seasonings. Simmer 5 minutes.
  7. Toss cooked pasta into the sauce and mix well.
  8. Sprinkle with light Parmesan and serve warm.
