🛒 Ingredients:
- 8 oz (225–250g) whole wheat pasta
- 10 oz (300g) lean ground chicken or turkey (93–95% lean)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- ½ cup dry red wine
- 1 tsp olive oil or cooking spray
- 2 tbsp grated light Parmesan cheese
- Salt, black pepper, Italian seasoning to taste
👩🍳 Instructions:
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil (or spray) over medium heat.
- Add garlic and lean ground meat. Cook until browned.
- Stir in bell peppers and cook for 3–4 minutes.
- Pour in red wine and let simmer 3–5 minutes (alcohol cooks off).
- Add diced tomatoes and seasonings. Simmer 5 minutes.
- Toss cooked pasta into the sauce and mix well.
- Sprinkle with light Parmesan and serve warm.
