Grab some shrimp
Ingredients
1 lb shrimp (peeled & deveined, fresh or frozen)
2 tbsp butter (or olive oil for dairy-free)
3 cloves garlic, minced
1 tbsp lemon juice
½ tsp salt
½ tsp black pepper
½ tsp smoked paprika (optional)
¼ tsp crushed red pepper flakes (optional for heat)
1 tbsp fresh parsley, chopped
Instructions
Preheat oven to 400°F (200°C).
Prepare the shrimp: If using frozen shrimp, thaw and pat dry.
Mix ingredients: In a bowl, toss shrimp with melted butter (or olive oil), garlic, lemon juice, salt, pepper, paprika, and red pepper flakes.
Bake: Spread shrimp on a baking sheet in a single layer and bake for 12-15 minutes, or until pink and cooked through.
Garnish: Sprinkle with fresh parsley before serving.
Serving Ideas
Serve over zucchini noodles, cauliflower rice, or a mixed green salad for a low-carb meal.
Pair with steamed veggies or roasted asparagus.
