Golden Baked Chicken

Chicken breasts often get a bad rap for being boring, but they sure don’t have to be. Take this Golden Baked Chicken for example. It’s impossibly juicy, full of savory flavor, and nestled in a creamy sauce that’s finished off with comforting provolone and some buttery cracker crunch. That? Well that’s anything but boring.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste
  • ½ cup plain nonfat Greek yogurt
  • 2 tablespoons light mayonnaise
  • ¼ cup grated Parmesan cheese
  • ½ cup whole wheat panko breadcrumbs or crushed corn flakes
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly coat a baking dish with cooking spray.
  3. Season the chicken with garlic powder, onion powder, paprika, thyme, salt, and pepper.
  4. In a small bowl, combine the Greek yogurt, light mayonnaise, and Parmesan until smooth.
  5. Spread the mixture evenly over each chicken breast.
  6. Sprinkle the panko breadcrumbs or crushed corn flakes over the top.
  7. Lightly spray the topping with cooking spray to help it crisp up.
  8. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. For an extra golden, crispy finish, broil for the last 2–3 minutes.
