Slow Cooker 3-Ingredient Limoncello Spritz Cake

Serve this cake warm, scooped straight from the slow cooker into small bowls or onto plates, letting the glossy limoncello glaze drip down the sides. It pairs beautifully with a dollop of lightly sweetened whipped cream or a scoop of vanilla or lemon sorbet to echo the spritz theme.

For adults, offer chilled limoncello spritzes or a simple glass of prosecco on the side; for a non-alcoholic pairing, try sparkling lemonade over ice with a twist of lemon. At a pool party, I like to set the slow cooker on the “warm” setting with a ladle and stack of small bowls so guests can help themselves between swims.

Ingredients

  • 1 box (about 15 oz) sugar-free lemon cake mix
  • 1 can (12 oz) Sprite Zero or 7UP Zero
  • ¼ cup limoncello liqueur
  • Nonstick cooking spray

Optional Light Lemon Glaze

  • ½ cup powdered zero-calorie sweetener
  • 1–2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Lightly coat the inside of your slow cooker with nonstick cooking spray.
  2. In a large mixing bowl, combine the sugar-free lemon cake mix, Sprite Zero, and limoncello. Stir just until combined—do not overmix.
  3. Pour the batter into the prepared slow cooker and spread it evenly.
  4. Cover and cook on High for 2–2½ hours or Low for 3–4 hours, until a toothpick inserted into the center comes out clean.
  5. Let the cake cool for 15–20 minutes before slicing.
  6. If using the glaze, whisk together the powdered sweetener, lemon juice, and lemon zest, then drizzle over the cooled cake.

  • Cut into 12 servings for about 3–5 WW Points per slice (may vary depending on the cake mix brand).
  • Garnish with fresh lemon zest or a few berries for extra flavor without adding many points.
