Instructions
- Lightly coat the inside of your slow cooker with nonstick cooking spray.
- In a large mixing bowl, combine the sugar-free lemon cake mix, Sprite Zero, and limoncello. Stir just until combined—do not overmix.
- Pour the batter into the prepared slow cooker and spread it evenly.
- Cover and cook on High for 2–2½ hours or Low for 3–4 hours, until a toothpick inserted into the center comes out clean.
- Let the cake cool for 15–20 minutes before slicing.
- If using the glaze, whisk together the powdered sweetener, lemon juice, and lemon zest, then drizzle over the cooled cake.
