giant blueberry pancake

Wanted something really filling, sweet and low carb for breakfast. Pancakes was on my mind, but they’re too many carbs to eat as much as I needed. Here’s my answer for two weight watchers points.

Ingredients

  • 1 egg
  • a splash of Fairlife 0% milk
  • 2 slices of 1pt bread
  • 1 banana
  • 1/2 cup blueberries
  • cinnamon
  • vanilla extract

Instructions

  1. Whip your egg, with a splash of Fairlife 0% milk. Tear up 2 slices of 1pt bread and stir into the egg mixture, let it sit until the bread absorbs the egg. Add the mashed banana and mix well. I also tossed in some blueberries. Feel free to add cinnamon and vanilla extract. Cook on medium low in a nonstick pan until browned. Flip and cover with a lid until it sets and the other side browns. Serve with sugar free maple syrup.
