French Onion Soup Meatballs

Ingredients

  • 1 lb (450 g) 96% lean ground beef
  • 1 egg
  • 2 tablespoons whole wheat breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce

Onion Soup Sauce

  • 2 large onions, thinly sliced
  • 1 teaspoon olive oil
  • 2 cups low-sodium beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon cornstarch + 1 tablespoon water

Topping

  • ⅓ cup reduced-fat mozzarella or Swiss cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl mix
    ground beef, egg, breadcrumbs, garlic powder, salt, pepper and Worcestershire sauce.
  3. Form 16 small meatballs and place on a baking sheet.
  4. Bake 15–18 minutes until cooked through.
  5. Meanwhile heat olive oil in a pan and cook sliced onions 10–12 minutes until soft and golden.
  6. Add beef broth and Worcestershire sauce and simmer 5 minutes.
  7. Stir in the cornstarch mixture to slightly thicken the sauce.
  8. Add baked meatballs to the pan, sprinkle cheese on top and cover 2–3 minutes until melted.
