Ingredients
- 4 Large Eggs
- 4 Egg Whites
- 1 tbspWater
- 1/4 tsp salt
- Pepper to taste
- 1 tbsp Olive oil
- 1 cup sliced yellow onion
- 1 1/2 cups sliced red and green bell peppers
- 1/2 tsp cumin
- 1/2 cup black beans drained and rinsed
- 1/2 cup prepared salsa
- 1/2 cup reduced-fat Mexican cheese blend
Instructions
- Preheat Broiler
- In a medium bowl, whisk together the eggs, egg whites, water, salt and pepper
- Heat a large, ovenproof nonstick skillet over medium heat. Heat the tablespoon of oil; then add the onions, bell pepper and cumin and cook for 5 to 6 minutes or until the veggies are softened. Sprinkle the beans evenly across the pan and gently mix them in to warm them. Reduce the heat to low and pour in the beaten egg mixture. Push the cooked egg to the edges to the center, allowing the uncooked egg portion to flow to the outside edges. Continue to cook over medium-low heat until the eggs are almost set.
- Lightly spoon the salsa across the egg mixture, cover evenly with the cheese and place under the preheated broiler for about 3 minutes to finish cooking the egg and melting the cheese.
- Remove the pan from the broiler. Use a spatula to loosen the edges and slide the frittata out onto a plate. Cut into 4 pieces.
