This amazing slow cooker cashew chicken is way better than takeout! The chicken is breaded to perfection, the sauce is full of flavor and the cashews hidden throughout are the best part!
Make this a restaurant-worthy meal with these sides. My tried and true favorites will make it yummy, Wontons, Egg Rolls, and of course,Rice. Don’t have time for the slow cooker? You can make cashew chicken right on the stove!
Ingredients
- 2 lbs boneless skinless chicken breast, cut into bite-size pieces
- 1 tablespoon cornstarch
- 1/2 teaspoon black pepper
- Cooking spray
- 1/3 cup low sodium soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons sugar-free ketchup
- 1 tablespoon sweet chili sauce
- 1 tablespoon brown sugar substitute (or monk fruit sweetener)
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1/4 teaspoon red pepper flakes
- 1/4 cup cashews
- Optional: broccoli, bell peppers, green onions
Instructions
- Toss chicken with cornstarch and black pepper.
- Spray a large skillet with cooking spray and cook chicken until golden and fully cooked.
- In a bowl, whisk together soy sauce, rice vinegar, ketchup, sweet chili sauce, sweetener, garlic, ginger, and pepper flakes.
- Pour sauce into skillet and simmer 2–3 minutes until slightly thickened.
- Stir in cashews and vegetables if using.
- Serve over cauliflower rice or steamed rice.
