Cream Dream Puffs (Low Point Version)

Ingredients

For the puffs

  • 1 cup water
  • 3 Tbsp light butter
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 tsp sweetener

For the filling

  • 1 package sugar-free instant vanilla pudding mix
  • 1 cup skim milk
  • 1 cup light whipped topping
  • ¾ cup nonfat Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, bring water and light butter to a boil.
  3. Stir in flour until a dough forms. Cook 1 minute.
  4. Remove from heat and cool slightly.
  5. Beat in eggs one at a time, then add vanilla and sweetener.
  6. Scoop small mounds onto a lined baking sheet.
  7. Bake 25–30 minutes until puffed and golden. Cool completely.

Filling

  1. Whisk pudding mix with skim milk until thick.
  2. Fold in Greek yogurt, whipped topping, and vanilla.
  3. Slice puffs open and fill with cream mixture.
