INGREDIENTS
Corn kernels (fresh, grilled, or thawed frozen)
Butter, 3 tablespoons
Mayonnaise, 3 tablespoons
Mexican crema or sour cream, 1/2 cup
Cotija cheese, crumbled
Garlic, minced (optional)
Jalapeño, finely chopped (optional)
Lime juice, freshly squeezed
Chili powder, 1 teaspoon
Salt, to taste
Fresh cilantro, chopped
INSTRUCTIONS
- Step 1: Melt butter in a skillet over medium heat.
- Step 2: Add corn and sauté 5–7 minutes until lightly charred.
- Step 3: Mix mayo, crema, lime juice, garlic, jalapeño, chili powder, and salt in a bowl.
- Step 4: Add warm corn and toss to coat evenly.
- Step 5: Scoop into serving cups, top with Cotija and cilantro.
- Step 6: Serve warm with lime wedges.
