Creamy Chicken & Mushroom Rigatoni Bake

A rich and comforting  pasta bake with tender chicken, sautéed mushrooms, and a creamy,  cheesy sauce poured over rigatoni—perfect for a cozy dinner.

Ingredients

  • 12 oz (340g) rigatoni
  • 2 cups cooked chicken (shredded or diced)
  • 1 cup mushrooms (chopped)
  • 2 tablespoons  butter
  • 2 cloves garlic (minced)
  • 2 tablespoons flour
  • 2 cups milk
  • ½ cup heavy cream
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • ½ teaspoon thyme or Italian seasoning

Instructions

  1. Cook Pasta
    Boil rigatoni according to package instructions.
    Drain and set aside.
  2. Cook Mushrooms
    In a pan, melt butter and sauté mushrooms until soft.
    Add garlic and cook for 1 minute.
  3. Make Sauce
    Stir in flour and cook briefly.
    Slowly add milk and cream while stirring until smooth and thickened.
  4. Add Chicken & Cheese
    Add cooked chicken, seasoning, salt, pepper, and half of the cheese.
    Mix well.
  5. Assemble
    Place pasta in a baking dish.
    Pour the creamy mixture over and mix gently.
  6. Top & Bake
    Top with remaining cheese.
    Bake at 350°F (180°C) for 20–25 minutes until golden and bubbly.
  7. Serve
    Serve hot and enjoy the creamy, comforting flavors.

Tips

  • Add spinach for extra nutrition
  • Use different mushrooms for deeper flavor
  • Broil for 2–3 minutes for a golden top
