Ingredients
- 12 oz (340g) rigatoni
- 2 cups cooked chicken (shredded or diced)
- 1 cup mushrooms (chopped)
- 2 tablespoons butter
- 2 cloves garlic (minced)
- 2 tablespoons flour
- 2 cups milk
- ½ cup heavy cream
- 1 cup shredded mozzarella
- ¼ cup grated Parmesan cheese
- Salt and black pepper, to taste
- ½ teaspoon thyme or Italian seasoning
Instructions
- Cook Pasta
Boil rigatoni according to package instructions.
Drain and set aside. - Cook Mushrooms
In a pan, melt butter and sauté mushrooms until soft.
Add garlic and cook for 1 minute. - Make Sauce
Stir in flour and cook briefly.
Slowly add milk and cream while stirring until smooth and thickened. - Add Chicken & Cheese
Add cooked chicken, seasoning, salt, pepper, and half of the cheese.
Mix well. - Assemble
Place pasta in a baking dish.
Pour the creamy mixture over and mix gently. - Top & Bake
Top with remaining cheese.
Bake at 350°F (180°C) for 20–25 minutes until golden and bubbly. - Serve
