Made a delicious dinner last night: Alfredo sauce, cauliflower rice and spinach casserole. I used frozen cauliflower rice in place of fresh cauliflower so it was easier to make. Only 3 points per serving.
Ingredients
- 5 cups cauliflower rice I used frozen rice cooked in microwave
- ¼ tsp black pepper
- 2-1/2 cups baby spinach
- 2 T grated parmesan cheese
- ½ cup panko breadcrumbs
- 1 T olive oil
- 1/2 Light Alfredo Sauce
Instructions
- Preheat oven to 400 degrees.
- Microwave cauliflower rice according to directions. Add to 3 qt casserole dish and sprinkle with black pepper.
- Stir in spinach and Alfredo sauce. Sprinkle with parmesan cheese.
- Combine breadcrumbs with olive oil and sprinkle on top of ingredients.
- Bake 20-25 minutes until top is golden brown.
