Cauliflower Rice casserole with Alfredo Sauce

Made a delicious dinner last night: Alfredo sauce, cauliflower rice and spinach casserole. I used frozen cauliflower rice in place of fresh cauliflower so it was easier to make. Only 3 points per serving. 

Ingredients

  • 5 cups cauliflower rice I used frozen rice cooked in microwave
  • ¼ tsp black pepper
  • 2-1/2 cups baby spinach
  • 2 T grated parmesan cheese
  • ½ cup panko breadcrumbs
  • 1 T olive oil
  • 1/2 Light Alfredo Sauce

Instructions

  1. Preheat oven to 400 degrees.
  2. Microwave cauliflower rice according to directions. Add to 3 qt casserole dish and sprinkle with black pepper.
  3. Stir in spinach and Alfredo sauce. Sprinkle with parmesan cheese.
  4. Combine breadcrumbs with olive oil and sprinkle on top of ingredients.
  5. Bake 20-25 minutes until top is golden brown.
