Blueberry Lemon bundt cake


  • 1 Sugarfree Vanilla Cake Mix
  • 3 eggs
  • 1/3 cup unsweetened applesauce
  • Grated 1 lemon rind
  • 1 tsp lemon extract
  • 2 tsp lemon juice
  • 1 cup wild organic frozen blueberries


  1. Mix all ingredients into the cake batter mix. add 1 tsp flour sprinkled over the berries before I folded them into the batter.
  2. Bake 325 for about 40 minutes. Top wasn’t very browned but you flip it over anyway from the Bundt pan.
