Ingredients

  • – 4 cups of frozen or fresh blueberries
  • – 1/2 cup of monk fruit sweetener
  • – 1 tbl lemon zest
  • – 6 sprays of ‘I Can’t Believe It’s Not Butter’ spray
  • **Cobbler Topping:**
  • – 1 cup self-rising flour
  • – 1/2 cup monk fruit sweetener
  • – 3/4 to 1 cup of almond milk
  • – Pinch of cinnamon

Instructions

  1. Preheat your oven to 350°F.
  2. Spray the bottom of your pan with butter spray.
  3. In the pan, combine the blueberries, 1/2 cup of monk fruit sweetener, and lemon zest. Toss gently to mix.
  4. In a separate bowl, mix together the flour, almond milk, cinnamon, and the remaining monk fruit sweetener to create the cobbler batter.
  5. Once the batter is combined, scoop it over the blueberries.
  6. Bake the cobbler for about 45 minutes, or until the batter is golden.
