Ingredients
- – 4 cups of frozen or fresh blueberries
- – 1/2 cup of monk fruit sweetener
- – 1 tbl lemon zest
- – 6 sprays of ‘I Can’t Believe It’s Not Butter’ spray
- **Cobbler Topping:**
- – 1 cup self-rising flour
- – 1/2 cup monk fruit sweetener
- – 3/4 to 1 cup of almond milk
- – Pinch of cinnamon
Instructions
- Preheat your oven to 350°F.
- Spray the bottom of your pan with butter spray.
- In the pan, combine the blueberries, 1/2 cup of monk fruit sweetener, and lemon zest. Toss gently to mix.
- In a separate bowl, mix together the flour, almond milk, cinnamon, and the remaining monk fruit sweetener to create the cobbler batter.
- Once the batter is combined, scoop it over the blueberries.
- Bake the cobbler for about 45 minutes, or until the batter is golden.
