Ingredients

  • 1 Onion
  • vegetable broth
  • 29 fl oz
  • Canned black beans
  • 15½ oz
  • Canned corn with red and green peppers
  • 11 oz
  • Canned tomatoes with green chilis
  • 7¼ oz
  • Salsa
  • 8 oz
  • wilted greens

Instructions

  1. In medium saucepan over moderate heat, cook onion in broth about 15 minutes, until onion is translucent. Drain and rinse black beans and drain corn. Add remaining ingredients.
  2. Simmer about 45 minutes, Serve warm. with wilted greens (You can add light or fat-free cheese and/or sour cream before serving. Just don’t forget the extra POINTS!)
