Baked Blueberry Pancake

It’s my go to when I’m craving a substantial breakfast. Fills me up through mid-afternoon, sometimes until an early dinner. one weight watchers point for the pancake — one point for the syrup

Ingredients

  • Kodiak Cakes Power Cakes Whole
  • Grain Buttermilk Flapjack & Waffle Mix 53g serving
  • 3 Tbsp
  • Blueberries
  • 1 cup s
  • Baking powder
  • 1/8 tsp
  • Swerve Brown sugar replacement
  • 1 Tbsp
  • Unsweetened applesauce
  • 1/2 cup s
  • Egg
  • 2 item s
  • Vanilla extract
  • 1 tsp

Instructions

  1. Spray pie plate and bake at 350 for 25 minutes. Sometimes I use a ripe banana instead of applesauce. I also use the monkfruit sweetener instead of Swerve if I have it on hand. 1 point for pancake, 1 point for SF syrup.
