Instructions
- Sauté these items;
- 1/4 cup chopped red pepper
- 1/4 cup chopped red onion
- Small handful of chopped kale
- 1 clove (minced) garlic
- 1 tbs diced ginger
- Mix the sautéed ingredients with 1/2 can of refried beans, 1/4 cup of chopped fresh cilantro and a squeeze of 1/4 lime.
- Roll ‘em up in 10 spring roll pastry sheets and spritz with a bit of cooking spray.
- Air fry at 400 degrees for 8 mins, flipping once.
- Dip; 1 avocado mashed, 2 tbs plain Greek yogurt and a squeeze of 1/4 lime. Sprinkle of chili flakes.
