Veggie Cheese Egg White Muffins

These veggie cheese egg white muffins are so perfect for grab-and-go eating. They are not only filling and healthy, but zero weight watchers points each! That leaves you with plenty of Weight Watchers points to spend on other yums.

Ingredients

  • Cooking spray about 4 sprays
  • 12 egg whites
  • 1 cup shopped spinach
  • 1 cup chopped red peppers
  • 1/2 teaspoon garlic powder
  • 1/3 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 cup fat free shredded cheese

Instructions

  1. Preheat oven to 350°F
  2. Grease 12 muffin pan cups with cooking spray
  3. Mix the egg whites and transfer to a medium bowl
  4. To your medium bowl, add the spinach, peppers tomatoes, garlic powder, smoked paprika, salt, and pepper
  5. Stir to combine
  6. Divide among cups of muffin pan
  7. Evenly divide cheddar cheese to each muffin cup
  8. Bake for 18 to 22 minutes, until set.
  9. Serving size: 1 egg white bite
