a bit of advice – they are hard to cut, initially. I cut them in quarters before beginning to peel them, using a large chef’s knife. Then, use a paring knife, not a vegetable peeler, because you will peel off all that wax, and the outer peeling – sometimes as much as 1/8th of an inch or even more, and your vegetable peeler just won’t handle it. A little work, but sooo worth it!
spray pan with Pam and lightly salt or season the way you want. Bake at 400 for 50-55 minutes.
