This Vegetarian Meatball and Potato Stew is what heart-warming and delicious food is all about. We’re talking layer upon layer of so many great flavors, made with basic pantry staples and all done in a little over 40 minutes. Serve it next to some tomato-rubbed bread and a bottle of Spanish red wine for an incredible meal.
INGREDIENTS
FOR THE MEATBALLS:
- 1/2lb ground pork
- 1/2lb ground beef
- 1small white onion, finely diced
- 3garlic cloves, crushed
- 1/2teaspoon ground cumin
- Salt and pepper, to taste
- 4tablespoons freshly chopped cilantro
- 2eggs
- 1/4cup Progresso™ Bread Crumbs
FOR THE STEW:
- 10cups Progresso™ beef flavored broth
- 1/2teaspoon ground cumin
- 3carrots, peeled and sliced
- 6large potatoes, peeled and chopped
- Salt and pepper, to taste
- 1/2cup freshly chopped cilantro
DIRECTIONS
- 1In a large bowl, combine all the ingredients required for the meatballs. Assemble the balls one by one and set aside.
- 2Pour the beef broth into a large pot and heat until the liquid reaches a boil. Afterward, add the meat-balls, cumin, salt and pepper.
- 3Cook for 20 minutes over medium heat before incorporating the carrots and potatoes. To finish, let simmer for 10 more minutes.
- 4Serve hot, garnished with some freshly chopped cilantro and a side of sliced avocado.
